I have to share this with you. This meal is my lunch/dinner everyday. I only seem to eat one meal a day so I like to make it good.

This lunch is amazing, quick, simple and you need very few ingredients: Perfect during the winter months.

1 litre vegetable stock. The way the meal is cooked means you have loads left over, I tend to save it for the next day.
I use this stuff although mines the vegan version (oher!) Its fantastic stuff, I had it in my cupboard for two years before I started using it in nearly every meal! (It makes the best risotto ever!)

Egg Noodles
Broccoli
Spring Onions
Pretty much any veg you like really. I use these two as they’re easily available to me!

Other things that if you have then thats great but you can leave them out.
Garlic
Chilli
Soy Sauce

Step 1:
Chop your veg and Mix your stock in a jug.

Step 2: (optional)
Put a touch of oil in your saucepan and add garlic and chilli, cook until it smells nice.

Step 3:
Add the stock to the saucepan and wait until its at a rolling boil, then add the noodles and veg. Cook for about 5 minutes or until the noodles are cooked.

Step 4:
Drain the mixture into a jug and place the noodles in your bowl. Measure out 300ml of the stock and add a dash of soy sauce, mix it up and pour over the noodles.

Step 5:
Devour.

I’m sure you could work out a way of adding meat to this dish, but I’m pretty much a vegetarian so I haven’t tried!

The best part of this meal is that I picked the broccoli myself, from manfriends fields!

I have the best recipe for banana cake everyone seems to love it. I’m in the mood for cupcakes though so here’s my guide to making Chocolate Banana cupcakes.

This recipe is also easy on the washing up!

ingredients

This makes six muffin sized cupcakes, just double to amounts for twelve etc. (if you want to make a cake just change the cooking time to 30mins and put the mixture into a loaf tin)
What you’ll need:
A saucepan
A mixing bowl
Muffin tin
1 or 2 over ripe bananas (the horrible brownish ones that noone wants.
1 tablespoon of vanilla essence
1 medium sized egg
1/2 a cup of sugar
60g butter
1 cup of self raising flour
1/4 a cup of milk

Icing/hundreds and thousands for the decoration (or if your not as lazy as I am – make the icing yourself!)

1. Preheat oven to 180c and place muffin cases into muffin tin. (you can also just grease the muffin tin if you don’t have cases)

2. Melt butter in saucepan, turn off the heat and add the sugar and vanilla essence. Mix well and leave until its reasonably cool, so that you can add the egg without cooking it!

3. Sift the flour into the mixture, but don’t completely mix.

4. Put your bananas into a bowl and add the milk. Using a fork squash the bananas as much as you can.

5. Add the banana mixture to the saucepan and now finish the mixing until everything is evenly mixed in.

6. Pour mixture into the muffin cases and place in the oven for 20minutes. Test with a knife to see if cooked. Leave to cool.

7. When their coolish smother with chocolate icing and sprinkle with hundreds and thousands.

8. Scoff the lot. nomnomnom.
